Move over BLT, there's a new sandwich in town and it's called the PLT (AKA Paneer Lettuce Tomato!) Tell me this sandwich doesn't sound drool-worthy - a hunk of fried paneer, crisp lettuce, juicy tomato slices and a spread of Roasted Garlic Achaar Mayo and Curry Mustard.
The PLT - Paneer, Lettuce and Tomato Sandwich
Serves 1
Ingredients
1/2 inch thick slices of paneer (enough for a single layer on your bread slice, ideally one big square per sandwich)
1 teaspoon oil
1 tablespoon Vegenaise or mayo
2-3 teaspoons Brooklyn Delhi Roasted Garlic Achaar
1 tablespoon Brooklyn Delhi Curry Mustard
2 slices of bread, toasted*
2 lettuce leaves
2 slices of tomato
* You can also toast the bread in the pan you fried the paneer in if you like.
Method
Mix together mayo, Brooklyn Delhi Roasted Garlic Achaar and Curry Mustard in a katori or small bowl. Taste for heat and add more achaar if necessary. Set aside in fridge.
Place a non-stick pan over medium heat. Add in oil and coat the pan. Add in your paneer slices to the pan and fry until golden brown on both sides, 2-3 minutes.
Transfer paneer to a plate lined with a paper towel. Sprinkle with salt and pepper.
Spread each bread slice with your Garlic Achaar Mayo / Curry Mustard Spread. Layer on lettuce, tomato slices and paneer. Top with the other bread slice. Slice sandwich diagonally.
