Desi Chilaquiles is a perfect weekend brunch recipe. It comes together pretty quickly too - just fry up tortilla chips with Dad's Savory Tomato Curry Simmer Sauce and top with sharp cheddar, eggs, cilantro and Guntur Sannam Hot Sauce. Brunch is served!
In a large skillet, add the jar of Brooklyn Delhi Dad's Savory Tomato Curry and about 1/4 cup water and bring to a simmer. Gently add your tortilla chips, coating them in sauce. Cook until the tortillas are heated through, about 3 minutes. Sprinkle with salt if desired and layer on cheddar cheese.
In a separate pan, fry your eggs. Top the chilaquiles with the fried eggs. Garnish with onion slices, chopped cilantro and avocado.
Serve hot with lots of Guntur Sannam hot sauce, Brooklyn Delhi Tomato Achaar or Roasted Garlic Achaar.
