Roasted Cauliflower Butter Masala is one of those meals that seems like it takes a lot of effort but really it's a recipe that can go on in the background while you get stuff done! The recipe and I'm using the term loosely here because this is more of a non-recipe is literally roasting cauliflower and then tossing it in my Cashew Butter Masala. The sweetness and texture of the cauliflower is a great foil to the creamy sauce and pairs perfectly with a little achaar for heat.
Roasted Cauliflower Butter Masala
1 head cauliflower, cut into florets
2 tablespoons oil
salt to taste
1 jar Brooklyn Delhi Cashew Butter Masala Simmer Sauce
Naan or Rice
Brooklyn Delhi Tomato or Roasted Garlic Achaar
Preheat oven to 425 degrees Fahrenheit. Place florets on sheet pan and toss with oil and salt. Roast in the oven for 25 to 35 minutes, tossing halfway through. You want there to be some nice browning on the cauliflower.
Just before cauliflower is done, add Cashew Butter Masala simmer sauce to a saute pan and heat through. Gently mix in the roasted cauliflower to the sauce and serve with naan or rice, plain yogurt and achaar for heat.
