Achaari Creamed Spinach

Ingredients

1 medium yellow onion, finely chopped 

2 tablespoons ghee 

1 pound baby spinach 

salt and pepper, to taste 

1/2 cup labneh, or strained yogurt 

1/4 cup Tomato Achaar, plus extra for garnish 

1/4 cup freshly grated parmesan cheese 

Method

Sauté onions in ghee over medium heat until golden. Add spinach and cook until wilted, 3-5 minutes. Season with salt and pepper. 

Mix in labne until creamy. Turn off heat and stir in tomato achaar and parmesan.

Season with salt and more Tomato Achaar if you like. Serve warm!
