Citrus Salad with Pink Lettuce

Just like witty banter, this salad is here to add sharp, sweet and spicy flavors to dinner with your partner or bestie. If you can't find pink radicchio, red radicchio works too. Same for blood oranges - feel free to swap it for any other orange you can find. Our Mango Chutney Vinaigrette brings this salad together and is a great dressing to keep in your back pocket for other salads!

Ingredients

Citrus Salad Ingredients

1 bunch pink radicchio

1 blood orange

1 navel orange

A few leaves of fresh mint


Mango Chutney Vinaigrette Ingredients

1 shallot, minced

1 tablespoon lemon juice

2 tablespoons sherry or balsamic vinegar

2 tablespoon Brooklyn Delhi Sweet or Spicy Mango Chutney 

1/2 teaspoon sugar or honey
1/2 teaspoon coarse salt or to taste

Fresh ground black pepper

6 tablespoons good olive oil

Method

Citrus Salad

Break up the radicchio into separate leaves, supreme the oranges into segments and thinly slice the mint. Put the radicchio and orange segments into a large bowl and add a few spoons of vinaigrette. Gently toss it together so that everything is coated with dressing.

Plate the salad and drizzle on a little more vinaigrette, if desired. Sprinkle on the mint leaves and serve immediately.


Mango Chutney Vinaigrette

Combine shallots, lemon juice, vinegar, Brooklyn Delhi Sweet or Spicy Mango Chutney, sugar or honey, coarse salt, a few grinds of fresh pepper in a large bowl. Whisk together. As you are whisking, add in the oil slowly until all of the oil is emulsified. Taste and add salt if needed. Store any unused dressing in the refrigerator.
