Ingredients
2 slices thick-cut toast
1.5 cups whole milk ricotta cheese
1/2 teaspoon kosher salt
1/4 cup EVOO
6 figs, cut in half
Brooklyn Delhi Date Tamarind Chutney
mint leaves, chopped
Method
Toast your favorite bread until golden and crisp. While the bread is toasting, prepare the whipped ricotta.
In a food processor, combine ricotta and a pinch of salt. Blend until combined, then, with the motor running, slowly drizzle in olive oil. Continue processing on high speed until the ricotta is smooth and creamy, about 2 minutes.
Once the toast is ready, spread or pipe the whipped ricotta generously onto each slice.
Top with fresh figs, a drizzle of Date Tamarind Chutney and garnish of mint leaves.
You can also serve this over a crostini for an appetizer—just toast the bread until golden and crisp, then follow the same steps for a delightful bite-sized treat.
