Butter Masala Pizza Toast

I absolutely adore cookbook author and Khaana Collective contributor Nik Sharma's recipes and his delicious Pizza Toast is no exception. I made one substitution - in place of pizza sauce, I subbed in my new Cashew Butter Masala sauce and it was delicious!

Serves 2-4

Ingredients

1/4 cup unsalted butter or extra-virgin olive oil

4 slices sandwich bread

1/4 cup Brooklyn Delhi Cashew Butter Masala

1/2 cup sharp cheddar

1 medium bell pepper

1 medium tomato

fine sea salt

freshly coarsely ground black pepper

2 tablespoons chopped cilantro or flat leaf parsley

1 tsp red chili flakes such as Aleppo or Brooklyn Delhi Guntur Sannam Hot Sauce

Method

Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set a wire rack on top. 

Toast each slice lightly.

Butter each slice of bread with 1 tablespoon of butter and place them on the wire rack. Spread 1 tablespoon of our Cashew Butter Masala simmer sauce on each slice. Sprinkle 1 tablespoon of cheese over each slice.

Cut the bell pepper and tomato into thin rings; reserve 4 and save the rest for another purpose. Place a slice of bell pepper and a slice of tomato on each bread slice. Season with salt and pepper. Sprinkle remaining cheese over the vegetables on the bread slices. 

Bake until the cheese is melted and the bread is toasted, about 10 minutes. Remove from the heat. Garnish each toast with 1/2 tablespoon of the cilantro and some red chili pepper flakes or our Guntur Sannam Hot Sauce. Serve immediately.
