Brown lentils simmered in bold, spiced Tikka Masala sauce with a splash of coconut milk. Cozy, flavorful, and easy as can be.
Ingredients
1 cup brown lentils
4 cups water
salt, to taste
1 jar Tikka Masala
1/2 cup coconut milk, or to taste
Method
Rinse 1 cup of brown lentils thoroughly. Add to a saucepan with 4 cups of water. Bring to a boil, then reduce heat and cover. Simmer for 20–30 minutes, until lentils are very tender but still hold their shape. Drain any excess water.
Season with salt. Stir in 1 jar of Tikka Masala and 1/2 cup of coconut milk. Simmer for a few minutes until heated through.
Serve over quinoa, rice, or your favorite grain. Top with a dollop of yogurt and a spoonful of Tomato Achaar.
