Ingredients
1 Black Bean Butter Masala pouch
oil or butter
flour tortillas or tortillas of choice - corn is really good too!
shredded Sharp cheddar
Method
Warm the Black Bean Butter Masala by microwaving the pouch for 90 seconds. While the beans are heating, butter or lightly oil a skillet and place it over medium heat.
Lay one tortilla flat in the pan, sprinkle half the shredded cheese evenly across it, and then spoon the warmed Black Bean Butter Masala over the cheese. Top with the remaining cheese and the second tortilla.
Cook the quesadilla for 2-3 minutes on each side, or until the cheese is melted and the tortillas are golden and crisp. Slice into wedges and serve hot with Tomato Achaar for dipping.
