Break up the radicchio into separate leaves, supreme the oranges into segments and thinly slice the mint. Put the radicchio and orange segments into a large bowl and add a few spoons of vinaigrette. Gently toss it together so that everything is coated with dressing.
Plate the salad and drizzle on a little more vinaigrette, if desired. Sprinkle on the mint leaves and serve immediately.
Mango Chutney Vinaigrette
Combine shallots, vinegar, Brooklyn Delhi Curry Mustard, Brooklyn Delhi Sweet Mango Chutney, coarse salt, a few grinds of fresh pepper in a large bowl. Whisk together. As you are whisking, add in the oil slowly until all of the oil is emulsified. Taste and add salt if needed. Store any unused dressing in the refrigerator.
