Ingredients
1 cup lentils
3 cups water
1 tsp salt or to taste
1 jar Brooklyn Delhi Golden Coconut Curry
1 cup coconut milk or cream
Method
Wash the lentils thoroughly, using fine-mesh colander. Add the lentils to a sauce pan with the water. Bring to a boil. Stay by the stove and monitor foaming, as your pot could quickly boil over if you are not watching. Skim the foam and turn down the heat to medium-low, partially cover, and simmer until cooked through, about 20 minutes.
Once cooked, mix in salt to the lentils to taste along with the Golden Coconut Curry sauce and coconut milk. Simmer until heated through, adding more coconut milk if you want a thinner consistency. Add salt to taste.
Serve in bowls with rice, topped with yogurt,Tomato Achaar or Roasted Garlic Achaar, chopped cilantro and onions.
