Masala Tofu Scramble

Garlic Tofu Scramble Toast

When the egg prices go up, we resort to tofu. This Garlic Tofu Scramble is so easy and full of flavor. Give this alternative a try, you won't be disappointed!

Serves 3-4

Ingredients

14 oz tofu 

veggies of your choice 

1 bell pepper - optional 

1/2 onion - optional  

1 tbsp high heat oil like sunflower or canola

3 tbsp Brooklyn Delhi Roasted Garlic Achaar - divided (2 tbsp for tofu scramble, 1 tbsp for garlic mayo) 

1/2 tsp turmeric 

couple slices of bread 

roughly 1 tbsp mayonnaise 

cilantro - optional 

Brooklyn Delhi Guntur Sannam hot sauce - optional 


Method

Drain tofu from the container, wrap it in a paper towel, and place it on a plate. Put another plate on top of the tofu, and microwave for 3-5 minutes. 

Unwrap the tofu and cut it into cubes. Then put the tofu in a bowl and mash it up with a fork. 

Chop up the veggies of your choice (I used onions and peppers). 

Heat 1 tbsp of oil in a pan over medium heat. Add in your veggies and cook until softened. 

Add in the tofu and cook on medium heat, until the majority of the water has evaporated. 

Add in 2 tbsps of Roasted Garlic Achaar and 1 tsp turmeric and mix well until evenly distributed. Remove tofu scramble from heat.

Take your couple slices of bread and spread mayo (I actually love Veganaise), and then add a spoonful of Roasted Garlic or Tomato Achaar on top of the mayo and swirl it in. 

Put your tofu scramble on top of the garlic achaar mayo and top with some cilantro and Guntur Sannam hot sauce!
