Golden Coconut Lentil Soup

Turn simple lentils into a rich, comforting soup with our Golden Coconut Curry Simmer Sauce. A flavorful, satisfying meal with minimal effort.

Ingredients

1 cup red lentils

3 cups water

1 tsp salt or to taste

1 jar Golden Coconut Curry Simmer Sauce 

1 cup coconut milk, or as needed for desired consistency

Method

Wash the lentils thoroughly in a fine-mesh colander. Add the lentils and water to a saucepan and bring to a boil. Stay by the stove and monitor for foaming, as the pot can quickly boil over. Skim off any foam, reduce the heat to medium-low, partially cover, and simmer until the lentils are tender, about 25 minutes.

Stir in the Golden Coconut Curry Simmer Sauce and coconut milk. Simmer until heated through, adding more coconut milk if you'd like a thinner consistency. Season with salt to taste.

Serve topped with plain yogurt, Brooklyn Delhi Tomato Achaar or Roasted Garlic Achaar, chopped cilantro, and chopped onions.
