Spicy Peanut Noodles

Serves 2 


2 packages instant ramen 

2 tablespoons peanut butter

2 tablespoons Tomato Achaar, plus more for serving 

1 tablespoon soy sauce 

1 tablespoon rice vinegar 

1 tablespoon white sesame seeds 

2 scallions, thinly sliced 


Bring a pot of water to boil and cook the ramen to al dente, according to package instructions. Drain and rinse under cold water. 

In a bowl, whisk together the peanut butter, Tomato Achaar, rice vinegar, and soy sauce. Add the cooked noodles and toss until they're well coated with the sauce. 

Divide the noodles into two bowls and top with sesame seeds and sliced scallions. Top with more Tomato Achaar for extra heat!
