Festive Cranberry Crostini
This dish is perfect for entertaining at home or bringing to a Friendsgiving or potluck. Simply assemble it at the party for a fresh, impressive addition to any gathering.

Ingredients

1 small loaf of crusty whole grain bread, sliced into ½-inch thick slices  

2 tablespoons olive oil  

sea salt  

12 oz fresh cranberries

1 cup sugar

1 cup water

4 tablespoons Sweet Mango Chutney or Spicy Mango Chutney 

10 oz goat cheese, at room temperature (or substitute with brie, ricotta, or cream cheese)

fresh rosemary 

Method

Preheat your oven to 400°F. Brush both sides of each bread slice lightly with olive oil and arrange them in a single layer on a baking sheet. Sprinkle a pinch of salt over the slices. Toast in the oven for 10-12 minutes, flipping halfway through, until golden brown on both sides. Set aside to cool.

In a saucepan, combine cranberries, sugar, water, and mango chutney. Simmer over medium heat for 10-15 minutes, stirring occasionally, until the sauce thickens and the cranberries burst. Once ready, remove from heat.

Spread a generous layer of soft cheese on each toast, top with the cranberry sauce, and finish with a sprinkle of fresh rosemary. Serve and enjoy!
