Our son Alok has loved nachos topped with Rajma ever since he was little. Rajma AKA Indian chili is a quintessential North Indian comfort food made with kidney beans slow cooked with tomato, onion, ginger, garlic & warming spices. Now this recipe is easier than ever to make with our Red Bean Rajma Masala and also works with our Black Bean Butter Masala!
Ingredients
Tortilla chips
1 pouch Red Bean Rajma Masala or Black Bean Butter Masala
Sharp cheddar cheese, grated
Sour cream or yogurt
1 avocado, sliced
jalapeno, sliced - optional
Method
Preheat the oven to 425°F. Spread your tortilla chips out in a single layer, on an oven-safe sheet pan.
Generously sprinkle cheddar cheese on top and Red Bean Rajma Masala on top. Top with more cheese and bake until melted and bubbly, about 5 minutes.
Top with dollops of yogurt or sour cream and avocado slices. If you like it spicy, finish with a drizzle of Tomato Achaar and optional jalapeno slices.
